Banana Chia Pot with Roast Bananas

I looove chia mixed with mashed banana. It's by far the best way to have chia.

I find it gives it a better consistency, especially if you're not really used to chia seeds because they are quite weird the first time you have them! (At least I thought that...)

Warning! - This has to be prepared the night before.

Ingredients   (Serves 2)

  • 4 Ripe Bananas
  • 3 tbsp Chia Seeds
  • 200ml Milk
  • 1-2 tbsp Agave or Honey
  • 1 tsp Cinnamon


  1. Mash up 3 of the bananas with a fork
  2. Stir together chia seeds, cinnamon and milk in a jar and leave for 10 minutes, Stir again, leave for 10, add the mashed banana and stir till completely combined. Cover with cling film to stop the banana turning brown and leave in the fridge overnight.
  3. The next morning, heat the oven to 190*C. Slice one of the bananas, drizzle with honey, sprinkle with a little cinnamon and lay out on a baking tray. Bake for 10 minutes (watching closely) till they turn brown on top. (If you burn the top, you can easily scrape it off so don't worry).
